Design notes: '''St. Gilbert began erecting Dornoch Cathedral in 1224 with the first service being held in 1239. The Cathedral was completed in 1245. In 1570 the Cathedral was set on fire during a clan feud and almost totally destroyed. It began restoration in 1616 and the became fully restored between 1835 and 1837.

Distillers Notes: Batch 3 started as a light spirit driven gin, we found that this style worked even better with the addition of Raspberries, Black Pepper and Lemon Peel. Works well when traditionally mixed.
